🧁 Ingredients
For Cookies:

1½ cups flour

½ tsp baking soda

½ tsp cinnamon + ½ tsp salt

½ cup coconut oil or vegan butter

½ cup brown sugar + ¼ cup cane sugar

¼ cup plant milk

1 tsp vanilla

Cinnamon Sugar (for coating):

¼ cup cane sugar + 1½ tsp cinnamon

Filling:

Vegan vanilla, cinnamon, or horchata ice cream

👩‍🍳 Steps
Mix dough: Cream oil & sugars. Stir in vanilla + milk. Add dry ingredients and mix.

Shape: Roll into balls, coat in cinnamon sugar, and flatten slightly.

Bake: 350°F (175°C) for 10 min. Cool completely.

Assemble: Sandwich softened vegan ice cream between cookies.

Freeze: Let set in freezer for 30–60 mins before serving.

✨ Optional:
Roll edges in crushed nuts, mini chocolate chips, or more cinnamon sugar.
