Vegan Creamy White Cheese Pizza
Ingredients
- 1 pizza dough
- 1 tbsp olive oil
- Cashew Cream: 1 cup soaked cashews, 2 garlic cloves, ½ cup water, 2 tbsp nutritional yeast, 1 tbsp lemon juice, salt & pepper
- ½ cup almond ricotta (or store-bought)
- 2 tbsp vegan parmesan (optional)
- 1 cup spinach, 1 cup mushrooms (sautéed)
- 1 onion (caramelized)
Instructions
- Preheat oven to 220°C (425°F).
- Blend cashew cream ingredients until smooth.
- Caramelize onion; sauté mushrooms & spinach.
- Roll dough, brush with olive oil, spread cashew cream.
- Add ricotta, parmesan, onions, mushrooms & spinach.
- Bake 12–15 mins until crust is golden.
- Sprinkle chili flakes or herbs, slice & serve.
