Ingredients

1 pizza dough

1 tbsp olive oil

Cashew Cream: 1 cup soaked cashews, 2 garlic cloves, ½ cup water, 2 tbsp nutritional yeast, 1 tbsp lemon juice, salt & pepper

½ cup almond ricotta (or store-bought)

2 tbsp vegan parmesan (optional)

1 cup spinach, 1 cup mushrooms (sautéed)

1 onion (caramelized)
Instructions

Preheat oven to 220°C (425°F).

Blend cashew cream ingredients until smooth.

Caramelize onion; sauté mushrooms & spinach.

Roll dough, brush with olive oil, spread cashew cream.

Add ricotta, parmesan, onions, mushrooms & spinach.

Bake 12–15 mins until crust is golden.

Sprinkle chili flakes or herbs, slice & serve.
