Patty Ingredients
- 1 cup cooked black beans (rinsed, drained)
- 1 cup cooked quinoa
- 1 cup chopped mushrooms
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 tbsp tomato paste
- 1 tbsp soy sauce
- 1 tbsp flax meal + 3 tbsp water (flax egg)
- ½ cup breadcrumbs
- 1 tsp smoked paprika + ½ tsp chili powder, onion powder, garlic powder
- ½ tsp liquid smoke (optional)
- Salt, pepper, olive oil
Steps
- Flax egg: Mix flax meal + water, set aside.
- Cook veggies: Sauté onion 3 min, add mushrooms, cook until dry; add garlic for 1 min.
- Mix: Mash beans (leave some chunks), add quinoa, mushroom mix, tomato paste, soy sauce, flax egg, breadcrumbs, seasonings. Adjust texture with more breadcrumbs or water.
- Shape & Cook: Form 4 patties, pan-fry 4–5 min per side until browned.
- Assemble: Toast buns, spread vegan mayo, add lettuce, tomato, patty, pickles, mustard, top bun.
