INGREDIENTS

• ½ cup vegan butter or coconut oil
• ¾ cup brown sugar (packed)
• ¼ cup maple syrup
• 1 tbsp ground flax + 2.5 tbsp water (flax egg)
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• ½ tsp baking powder
• ¼ tsp salt
• Optional: ½ cup vegan white or dark chocolate chips, walnuts, or pecans

COOKING INSTRUCTIONS

• Preheat oven to 175°C / 350°F. Line or grease an 8×8″ pan.
• Mix flax + water. Let sit 5 mins.
• In a bowl, melt vegan butter and whisk in brown sugar, maple syrup, flax egg, and vanilla.
• Stir in flour, baking powder, and salt.
• Fold in chips/nuts if using. Spread into pan.
• Bake 22–25 mins, or until edges are golden and center is set. Cool before slicing!
