Vegan Cinnamon Apple Cereal Parfait

INGREDIENTS

  • 1 cup vegan cinnamon cereal (e.g., cinnamon puffed rice, cinnamon granola)
  • 1 cup dairy-free yogurt (coconut, almond, or soy)
  • 1 apple, diced
  • 1 tbsp maple syrup (or agave)
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup chopped nuts (walnuts or pecans) (optional)
  • 1 tbsp raisins (optional)

COOKING INSTRUCTIONS

  • Prepare apples: In a pan, cook diced apple with maple syrup, cinnamon, and lemon juice for 5 minutes until soft. Let cool.
  • Layer the parfait: In glasses, layer yogurt, cinnamon cereal, spiced apples, and nuts. Repeat until full.

Top & serve: Sprinkle with extra cinnamon, nuts, or raisins. Serve immediately for a crunchy texture.
