Vegan Matcha Pistachio Sticky Buns

INGREDIENTS

  • Dough: 2 ½ cups flour, 2 tbsp matcha, ¼ cup coconut sugar, 1 packet (2 ¼ tsp) yeast, ¾ cup warm almond milk, 3 tbsp vegan butter, 1 tsp vanilla, ½ tsp salt.
  • Filling: ½ cup brown sugar, 2 tbsp matcha, 2 tbsp vegan butter, ¼ cup chopped pistachios.
  • Glaze: ½ cup coconut cream, ⅓ cup maple syrup, 2 tbsp vegan butter, ¼ cup crushed pistachios.

COOKING INSTRUCTIONS

  • Activate yeast in warm almond milk. Mix in butter, sugar, vanilla, salt, and matcha. Add flour, knead, and let rise 1 hour.
  • Mix brown sugar, matcha, and butter. Roll out dough, spread filling, sprinkle pistachios, roll, and slice.
  • Heat coconut cream, maple syrup, and butter. Pour into a baking dish, sprinkle pistachios.
  • Place rolls on top of glaze, let rise 30 min. Bake at 350°F (175°C) for 25–30 min.
  • Flip buns onto a plate to reveal the sticky glaze. Enjoy warm!
