Savory Zucchini & Herb Loaf

INGREDIENTS

  • 1 ½ cups grated zucchini (squeeze out liquid)

  • 1 ½ cups flour (or oat flour for GF)

  • 1 tbsp ground flax + 2.5 tbsp water (flax egg)

  • ½ cup plant milk

  • ¼ cup olive oil

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp garlic powder

  • 1 tsp dried oregano or thyme

  • Optional: 2 tbsp nutritional yeast or vegan cheese shreds

COOKING INSTRUCTIONS

  • Preheat oven to 175°C (350°F) and line a loaf pan.

  • Mix 1 tbsp ground flaxseed with 2½ tbsp water – let sit 5 mins.

  • Grate & squeeze 1½ cups zucchini to remove excess water.

  • In a bowl, whisk:

    • Flax egg

    • ½ cup plant milk

    • ¼ cup olive oil

    • Grated zucchini

  • Stir in dry ingredients:

    • 1½ cups flour

    • 1 tsp baking soda

    • ½ tsp garlic powder + 1 tsp dried herbs

    • Salt + optional nutritional yeast or vegan cheese

  • Mix just until combined, pour into pan, and smooth top.

  • Bake 45–50 mins until golden and firm. Cool before slicing.
