
Savory Zucchini & Herb Loaf

INGREDIENTS

1 ½ cups grated zucchini (squeeze out liquid)

1 ½ cups flour (or oat flour for GF)

1 tbsp ground flax + 2.5 tbsp water (flax egg)

½ cup plant milk
-
¼ cup olive oil
-
1 tsp baking soda
-
½ tsp salt
-
½ tsp garlic powder
-
1 tsp dried oregano or thyme
-
Optional: 2 tbsp nutritional yeast or vegan cheese shreds
COOKING INSTRUCTIONS

Preheat oven to 175°C (350°F) and line a loaf pan.

Mix 1 tbsp ground flaxseed with 2½ tbsp water – let sit 5 mins.

Grate & squeeze 1½ cups zucchini to remove excess water.

In a bowl, whisk:

Flax egg
-
½ cup plant milk
-
¼ cup olive oil
-
Grated zucchini
-

Stir in dry ingredients:

1½ cups flour
-
1 tsp baking soda
-
½ tsp garlic powder + 1 tsp dried herbs
-
Salt + optional nutritional yeast or vegan cheese
-

Mix just until combined, pour into pan, and smooth top.

Bake 45–50 mins until golden and firm. Cool before slicing.
