Ingredients:

For the taco filling:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cooked black beans
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For serving:

  • 8 small corn tortillas
  • Avocado slices
  • Salsa
  • Chopped cilantro
  • Lime wedges

Instructions:

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute, until fragrant.

Add the diced bell pepper and zucchini to the skillet. Cook until vegetables are tender, about 5-7 minutes.

Stir in the cooked black beans and corn kernels. Season with ground cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes, until heated through.

Warm the corn tortillas in a dry skillet or microwave.

To assemble the tacos, spoon the vegetable mixture onto each tortilla. Top with avocado slices, salsa, chopped cilantro, and a squeeze of lime juice.

Serve immediately and enjoy your delicious vegan tacos!
