Vegan Pasta Primavera

Ingredients:

  • 8 oz (225g) pasta of your choice (spaghetti, penne, or fusilli work well)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • 1/4 cup chopped fresh basil
  • 2 tbsp nutritional yeast (optional, for a cheesy flavor)
  • Juice of 1 lemon
  • Red pepper flakes (optional, for heat)

Instructions:

Cook pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced onion, sauté until fragrant and translucent.

Add sliced bell peppers, zucchini, cherry tomatoes, and broccoli florets to the skillet. Cook for 5-7 minutes, or until vegetables are tender but still crisp.

Season with salt, pepper, and red pepper flakes if using. Stir in chopped basil and nutritional yeast.

Add cooked pasta to the skillet and toss everything together until well combined.

Squeeze lemon juice over the pasta and vegetables, adjust seasoning if needed.

Serve hot, garnished with extra basil leaves if desired.
