Vegan BBQ Jackfruit Sliders

This week in Erin & Jane’s Kitchen we’re cooking up some delicious Vegan BBQ Jackfruit Sliders! These sliders are perfect for a casual dinner or as a crowd-pleaser at gatherings. The jackfruit provides a meaty texture that soaks up the BBQ flavors wonderfully, making it a great vegan substitute.

Vegan BBQ Jackfruit Sliders

Ingredients:

  • 2 cans (20 oz each) young green jackfruit in water or brine, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 cup vegan BBQ sauce
  • Salt and pepper, to taste
  • Vegan slider buns
  • Coleslaw (optional, for serving)
  • Pickles (optional, for serving)

Instructions:

Prepare Jackfruit: Shred the jackfruit with your hands or a fork to mimic the texture of pulled pork.

Cook Onion and Garlic: In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.

Add Spices and Jackfruit: Stir in smoked paprika, chili powder, and cumin. Add the shredded jackfruit and cook for a few minutes, stirring frequently.

Add BBQ Sauce: Pour in the vegan BBQ sauce, reduce the heat to low, and cover. Let it simmer for 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors. Season with salt and pepper to taste.

Assemble Sliders: Toast the slider buns lightly. Spoon a generous amount of BBQ jackfruit onto each bun. Top with coleslaw and pickles if desired.

Serve and Enjoy: Serve these tasty sliders hot and enjoy the burst of flavors!

Optional Variations: Feel free to add avocado slices or vegan cheese for extra richness.
