Chickpea Salad Sandwiches

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Bread slices (whole grain or your choice)

Optional: Lettuce, tomato slices, cucumber slices for sandwich assembly

Instructions:

Mash Chickpeas: In a mixing bowl, mash the chickpeas with a fork or potato masher until they’re broken down but still chunky.

Make Salad Mixture: Add vegan mayonnaise, Dijon mustard, chopped celery, red onion, and lemon juice to the mashed chickpeas. Stir to combine everything. Season with salt and pepper to taste.

Assemble Sandwiches: Take your bread slices and add a generous scoop of the chickpea salad. Add lettuce, tomato, and cucumber if desired.

Serve: Cut the sandwich in half and serve, or pack it for an on-the-go meal.
